Ingredients:
- 1 pint grape tomatoes, halved
- 1 english cucumber, cut into quarters and then a 1″ dice
- 1 avocado, peeled and diced into 1″ pieces
- 1/2 red onion, thinly sliced
- 1 15 oz can no-salt added garbanzo beans, drained and rinsed
- 10 basil leaves, thinly sliced
- 3 Tbsp. olive oil
- juice of 1 lemon
- Sea salt, to taste
Directions:
Mix all ingredients in a large glass bowl, gently stirring to toss well.
Notes: You can use any variety of tomatoes -colorful heirloom tomatoes, cut into bite-sized chunks, make a great presentation
