Good Mood Smoothie (serves 2)
1 banana, peeled and frozen in chunks
3 T. cacao nibs
3 dates (B vitamins to help improve mood)
2 T. almond butter (more alkalinizing than other nuts)
2 T. maca powder (helps balance the hormonal system)
2 cups unsweetened almond milk
Add all ingredients to a high speed blender for about 45-60 seconds until smooth.
Chickpea Avocado Lemon Spinach Salad (serves 2-3)
¼ cup extra virgin olive oil
¼ cup freshly squeezed lemon juice (2-3 lemons)
½ t. minced garlic
1 t. sea salt
½ t. freshly ground black pepper
3 cups cooked chickpeas, rinsed and drained
1 ripe avocado, cubed
½ cup finely chopped flat leaf parsley
2 cups baby spinach leaves
1. Combine the olive oil, lemon juice, garlic, salt and pepper in a large mixing bowl.
2. Whisk well and add the chickpeas, avocado, parsley and spinach. Stir well to combine and cover the bowl with plastic.
3. Allow the flavors to marinate in the refrigerator for at least an hour, up to overnight.
4. Remove from the refrigerator and stir well before serving. Serve cold or at room temperature.
