Ingredients

1⁄2 pound shitake mushrooms, stems removes and sliced 1 tablespoon olive oil
1-2 cloves garlic, crushed
1 bunch kale, stems removed and leaves chopped
pinch of sea salt

Directions

1. Warm oil on medium heat with crushed garlic until aromas are released, about 2-3 minutes.
2. Add mushrooms, stir-fry for 5-7 minutes
3. Add kale, continue to stir-fry until kale for a few minutes
4. Add a splash of water or low sodium vegetable broth and a pinch of salt to pan; cover and let steam for 5 minutes
