Chop 2 lbs of root vegetables (turnips, carrots, beets, radishes, sweet potato) into bite-sized pieces. Toss with 2 Tbsps. Extra virgin olive oil and roast at 425 degrees until tender and browned in spots, 30-40 minutes. Sprinkle with ¼ cup roasted and salted pumpkin seeds.
