Serves 2
Ingredients:
4 ripe small tomatoes, quartered
1 cup cut green beans, lightly steamed
2 red potatoes, scrubbed and boiled until tender, sliced into discs
2 hard boiled eggs, peeled and quartered
½ cup red onion, cut into rings
1 – 2 cans pole caught tuna, drained well (no salt added is a good option)
¼ cup chopped walnuts
Greens of your choice (baby Arugula, Spring Mix, Romaine hearts all work well)
Basic Vinaigrette Dressing
Assemble ingredients on a large platter, atop Greens. Sprinkle with chopped walnuts. Add Dressing to taste.
