Cooking time: 20 minutes
Serves: 4 people

Ingredients:

  • 1/2 cup dried fruit (goji berries, apricots, cranberries or dates work well)
  • 1/2 cup steel cut oats
  • 1/2 cup well rinsed quinoa
  • 1 tsp. sea salt, optional
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cardamom
  • 4 cups water

Directions:

Bring all ingredients to a boil in a medium saucepan. Cover and let sit off heat overnight. OR Bring mixture to a boil; reduce heat and simmer, stirring occasionally, until grains are tender.

If preparing the night before, reheat, covered, over medium-low heat, stirring occasionally and adding more water, if necessary, until warmed through, 3-5 minutes.

Serve with maple syrup and toasted walnut pieces.
