Ingredients:

2 lbs butternut squash, peeled, seeded and cut into 2” x ½” sticks (or buy pre-cut chunks)
4 tsp. olive oil plus more for the pan
½ tsp. sea salt

Directions:

Preheat the oven to 450 degrees. Lightly oil a large baking sheet. Combine the squash, 4 tsp. olive oil and sea salt in a large mixing bowl and mix well. Arrange the squash in a single layer, without touching, on the oiled baking sheet. Roast the squash, turning occasionally, until browned, 25-30 minutes (or to desired browning)
