Gazpacho

Makes 6 Servings

Ingredients:

5 medium ripe tomatoes
1 large cucumber, peeled and chopped
1 green pepper, seeded and chopped
1 medium red onion, chopped
2 garlic cloves, crushed
ground sea salt, to taste
freshly ground black pepper, to taste
juice of one lemon
2 cups tomato juice
Tabasco sauce, to taste, ½ cup chopped cilantro, for garnish

Directions:

In a large bowl, combine tomatoes, cucumber, green pepper, onion, garlic, salt, pepper, lemon juice and tomato juice, Mix thoroughly. Ladle into individual bowls and add Tabasco to taste. Garnish with cilantro.
