Ingredients:

1 ½  cups uncooked multi-grain cereal (I like Bob’s Red Mill)
water 3-4 cups, according to package directions)
¼ tsp Sea salt (optional)
1 Tbsp. organic coconut oil
¼ cup unsweetened coconut flakes
1 large sweet/tart apple, cut into ¼” inch pieces
¼ tsp. ground cinnamon
2 Tbsp. pure maple syrup, plus more for drizzling

Directions:

  1. Cook cereal according to package directions. Set aside.
  2. Heat coconut oil in a medium skillet over medium-high heat. Cook coconut flakes, stirring often, until toasted, about 2 minutes. Transfer to a plate.
  3. Add apple, cinnamon and 2 Tbsp. maple syrup to skillet and cook, stirring until apples are browned in spots and tender, about 3 minutes.
  4. Serve cereal topped with apples, coconut and drizzle with a small amount of maple syrup, if desired.
