Serves: 6 people

Ingredients:

  • 1 pint grape tomatoes, halved
  • 1 english cucumber, cut into quarters and then a 1″ dice
  • 1 avocado, peeled and diced into 1″ pieces
  • 1/2 red onion, thinly sliced
  • 1 15 oz can no-salt added garbanzo beans, drained and rinsed
  • 10 basil leaves, thinly sliced
  • 3 Tbsp. olive oil
  • juice of 1 lemon
  • Sea salt, to taste

Directions: 

Mix all ingredients in a large glass bowl, gently stirring to toss well.

Notes: You can use any variety of tomatoes -colorful heirloom tomatoes, cut into bite-sized chunks, make a great presentation
