Cooking time : 20 minutes
1 small fennel bulb, trimmed and cut into ½ inch slices
1 small Vidalia onion, peeled and cut into ½ inch slices
1 navel orange, cut into ¼ inch wedges
2 Tbsp good quality olive oil
4 salmon fillets, skin removed
Sea salt and ground black pepper
¼ tsp crushed red pepper flakes
1. Heat oven to 425 degrees. Place fennel, onion and orange on a large, rimmed baking sheet and toss with the 2 Tbsp olive oil. Nestle the salmon fillets among the vegetables.
2. Roast until salmon is cooked through and to desired wellness and vegetables are soft, about 15-20 minutes.
3. When salmon is cooked, remove from baking sheet to a separate plate and then re-heat oven to a broil. Broil vegetables and orange until slightly browned, about 2 minutes.
4. Place vegetables on a serving platter and arrange salmon fillets on top.
