¼ cup good quality olive oil
¼ cup raw honey
¼ cup lemon juice, preferably fresh
3 Sage leaves
Prep the artichokes by cutting off the top quarter of each and removing the stems. Using scissors, cut the remaining tips off the remaining leaves. Fill a large pot with 3 inches of water. Place the artichokes in a steamer basket inside the pot and steam for 30-45 minutes, until the leaves are tender and easily removed.
For the dipping sauce:
Combine all the remaining ingredients in a small saucepan over medium-high heat. Stir continuously until it begins to thicken slightly, about 2 minutes. Remove from heat and serve warm, alongside the artichokes.
